Gluten free pie crust

A tender flaky pie crust
Prep Time 15 minutes
Servings 2 shells

Ingredients
  

  • 140 g White rice flour
  • 140 g Brown rice flour
  • 105 g Almond flour
  • 35 g Arrowroot starch
  • 1/2 cup Cold butter cut into chunks
  • 1/4 cup Neutral oil Refinded coconut or grapeseed work well
  • 1 cup Whole fat greek yogurt

Instructions
 

  • Mix together flours
  • Cut in butter and oil with fork or pastry cutter
  • Mix in yogurt until dough comes together
  • Add a small amount of cold water if needed
  • Wrap in plastic wrap and chill

Notes

Note: This will not look like normal pie crust dough, it will be much softer, like fluffy play dough. That is what it is supposed to be like. 
 
Also, there will be a 10 minute period when cooking the pie that everything will smell like hot yogurt. Do not worry, your pie crust will not taste like that.
 

Some Variants

Savory
Try adding in 1/2 tsp of paprika, or turmeric to the flour for use with a quiche or meat pie
 
Sweet
Use a flavored yogurt, or add 2 TBS sugar to the crust for an extra indulgent dessert pie.
