Gluten Free Pie Crust

Gluten Free Pie Crust

The Challenge

Gluten free pie crust that is delicious and tender

Additional Requirements

Must be easy to make

The Process

This is one of the first recipes I made when my husband went gluten free, so I have much less information on how the recipe came to be.

Notes, Tips and Tricks

This dough does not act like gluten rich dough. It acts more like play dough.

It has no stretch and loves to tear. However, once it is baked it is tender, rich and delicious.

If it is cold you can roll it out successfully, you will need to place and not stretch the dough into the pan. Any tears you can just push more dough into without worry, it will join together without issue. You can also forget about worrying you will overwork the dough. With no gluten or gums, you cannot over work it.

  • 140 g Brown rice flour
  • 105 g Almond flour

  • Mix together flours
  • Cut in butter and oil with fork or pastry cutter
  • Mix in yogurt until dough comes together
  • Add a small amount of cold water if needed

Notes

Note: This will not look like normal pie crust dough, it will be much softer, like fluffy play dough. That is what it is supposed to be like.

Also, there will be a 10 minute period when cooking the pie that everything will smell like hot yogurt. Do not worry, your pie crust will not taste like that.

Some Variants

Savory
Try adding in 1/2 tsp of paprika, or turmeric to the flour for use with a quiche or meat pie

Sweet
Use a flavored yogurt, or add 2 TBS sugar to the crust for an extra indulgent dessert pie.
