The Challenge

I want banana bread but only have peach cups

Additional Requirements

I have a meeting in 30 minutes, so I need to get the bread in the oven in 20.

Gluten free, so my husband can consume leftovers

I love the obvious peach chunks. I am also glad my husband isn’t home or this would be gone before it had 5 minutes to cool.

The Flavors

I did a quick search online to see if peach bread is even a thing. Happily it is!

I decided I didn’t want a glaze, and I had no fresh peaches, only those little cups of peaches in juice. So I opted to go for a stronger flavor to punch up the slightly inferior peaches.

I only used ginger powder, but if I do it again I will add in finely chopped crystallized ginger.

Or go with cinnamon instead of ginger

I also didn’t have any milk in my fridge so I used unsweetened coffee creamer, it did the trick.

You might notice that my rice flour is always equal parts white and brown, that is because I just dump a bag of white and bag of brown into my flour container and mix them thoroughly and use that as my rice flour.

Also feel free to replace the arrowroot starch with tapioca starch. It cooks basically the same, but my husband has issues with the tapioca.

A little on the dense side, but that makes it a better breakfast bread in my book. 

Ginger Peach Quick Bread

Ingredients
  

  • 70 g white rice flour
  • 70 g brown rice flour
  • 50 g arrowroot starch
  • 70 g almond flour
  • 1/2 tsp xanthum gum
  • 1.75 tsp baking powder
  • 1/4 tsp salt
  • 3/4 tsp ground ginger
  • 1/8 tsp nutmeg
  • 1/8 tsp cardamom
  • 1/2 cup milk or coffee creamer, or almond milk
  • 1/2 cup oil
  • 1 large egg
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 2 cups finely chopped peaches 6 peach cups drained

Instructions
 

  • Preheat oven to 350F
  • Mix dry ingredients together
  • Stir in wet ingredients
  • Stir in peaches
  • Put in a greased bread pan (9x5in)
  • Bake for 55-65 minutes
  • Let cool in pan for 10 minutes
  • Run a knife along the edges to loosen
  • Turn out and let cool on cooling rack

Notes

For sea level baking
  1. Reduce total flour by 20 g
  2. Increase baking powder by 1/4 tsp
